  • 1 lb lasagna noodles
  • 2 tsp annatto powder
  • 1 1/2 tsp celery salt
  • 4 clove garlic sliced
  • 5 large chicken breasts boneless and skinless
  • 4 quart water
  • 1/2 large onion
  • 2 1/2 cup shredded cheese, Colby Jack
  • 29 tomato puree halved
  • 2 tbsp sugar
  • 1/2 tsp sweet basil
  • 1/2 tsp whole leaf oregano
  • 2 tbsp olive oil, extra virgin
  • 1/4 cup balsamic vinegar

Directions

    In a pot add water, chicken, annatto powder, and celery salt and boil.

    Cook till chicken is done.

    Preheat oven 400 Fahrenheit

    Boil pasta cook till done set aside.

    Shred the chicken.

    To a pan add 2 tablespoons of oil fry the sliced garlic 2 minutes, add onions.

    When the onions are soft add chicken, half the puree, vinegar, basil, oregano, sugar, and salt.

    Cover and simmer

    Slice noodles in half.

    Add 1 tablespoon of chicken mixture to noodles roll them up.

    Then set into a pan repeat till no more noodles to roll.

    Put cheese on top.

    Add the other half of puree over the cheese.

    Then bake for 30 -40 minutes.
