Ingredients

  • 5 Ancho chilies seeded and soaked in hot water
  • 2 chilies Pasilla, seeded and soaked in hot water
  • 4 cloves garlic roasted
  • 1/2 onion roasted
  • 5 allspice grains
  • 1 clove
  • 1 pinch cumin
  • 1 cinnamon stick
  • 1 cup white vinegar
  • salt
  • sugar
  • 1 cup adobo sauce above
  • 27 1/2 grams achiote paste
  • pork steak or chicken breast strips
  • vegetable oil
  • coriander chopped
  • onion chopped
  • pineapple chopped, optional

Directions

    Place all the ingredients in a blender. Puree until smooth.

    In a blender, add the adobo sauce and achiote. Puree until smooth.

    Spread on the meat. Let it marinate for at least 30 minutes.

    In a saucepan, add oil and sear the meat.

    Serve on tortillas and add coriander, onion, and pineapple (optional).
