- 1 1/2 cups self-rising flour
- 1 1/4 cups all-purpose flour
- 2 sticks unsalted butter, at room temperature
- 2 cups granulated sugar
- 4 large eggs, at room temperature
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 3 tablespoons caraway seeds
- 8 ounces pastrami, chopped
- Honey Mustard Glaze, recipe follows
- Honey Mustard Frosting, recipe follows
- Soft Pretzel, sliced in slivers, for garnish
- 1/4 cup powdered sugar
- 1 tablespoon honey
- 1 tablespoon spicy brown mustard
- 2 sticks (1/2 pound) unsalted butter, at room temperature
- 1/2 cup honey mustard
- 1 tablespoon spicy mustard
- 2 cups powdered sugar
Directions

1Preheat the oven to 350 degrees F. Line cupcake pans with 24 liners.

2In a medium bowl, combine both flours.

3Using an electric mixer with the paddle attachment, cream the butter until smooth.

4Gradually add the granulated sugar and beat until fluffy.

5Add the eggs, one at a time, beating well after each addition.

6Add the flour mixture in three parts, alternating with the milk.

7Add the vanilla.
-
8Scrape down the sides of the bowl to make sure all the ingredients are well blended.

9Beat until just combined.

10Do not over beat.

11Fold in the caraway seeds.

12Spoon the batter into the liners, filling the cups two-thirds full.

13Bake until a toothpick inserted in the center comes out clean, about 16 minutes.

14Cool the cupcakes completely.

15Cut the tops off the cupcakes and reserve.

16Place the chopped pastrami on the bottom half of the cupcakes.

17Drizzle 1 teaspoon Honey Mustard Glaze (more or less to taste) on the pastrami.

18Place the cupcake tops on top of the glaze, pressing down gently.

19Frost the cupcakes with Honey Mustard Buttercream Frosting.

20Garnish with soft pretzel slivers.

21In a small bowl, combine the powdered sugar, honey and mustard, and mix until smooth.

22Using an electric mixer with the paddle attachment, cream the butter until smooth.

23Add the honey mustard and spicy mustard and mix on high for 1 minute, scraping down the sides often.

24Add the powdered sugar 1/4 cup at a time, mixing well after each addition.
