Ingredients

  • 2 qt. water
  • 2 tsp. peppercorns
  • 2 tsp. whole cloves
  • 2 bay leaves
  • 1 Tbsp. fresh parsley
  • 2 1/2 lb. chicken livers
  • 2 c. butter
  • 1 small onion, chopped fine
  • 1 large garlic clove
  • 1 Tbsp. salt
  • 1/2 tsp. hot sauce
  • 2 tsp. dry mustard
  • 1/2 tsp. nutmeg
  • 1/4 c. brandy

    Combine first 5 ingredients and simmer for 10 minutes; strain. Add livers to liquid.

    Cook below simmering 10 minutes.

    Drain. Pass through blender.

    Blend remaining ingredients with liver. Stir in brandy.

    Line 9 x 5-inch loaf pan with foil.

    Pack pate into pan.

    Chill.
