- 2 qt. water
- 2 tsp. peppercorns
- 2 tsp. whole cloves
- 2 bay leaves
- 1 Tbsp. fresh parsley
- 2 1/2 lb. chicken livers
- 2 c. butter
- 1 small onion, chopped fine
- 1 large garlic clove
- 1 Tbsp. salt
- 1/2 tsp. hot sauce
- 2 tsp. dry mustard
- 1/2 tsp. nutmeg
- 1/4 c. brandy
Directions

1Combine first 5 ingredients and simmer for 10 minutes; strain. Add livers to liquid.

2Cook below simmering 10 minutes.

3Drain. Pass through blender.

4Blend remaining ingredients with liver. Stir in brandy.

5Line 9 x 5-inch loaf pan with foil.

6Pack pate into pan.

7Chill.
