- 3/4 to 1 c. uncooked long grain rice
- chicken (thighs are best)
- 1 soup can water
- 1 can button mushrooms, drained
- 3/4 envelope dry onion soup mix
- 1 (10 1/2 oz.) can cream of chicken soup
- 1/8 tsp. pepper
Directions

1Sprinkle raw rice evenly in bottom of 12 x 9-inch baking dish. Cover with dry onion soup mix.

2Arrange chicken pieces on top. Combine soup, water and pepper; pour over chicken.

3Add mushrooms. Cover.

4Bake in a 350° oven for 1 to 1 1/2 hours.

5Remove cover; brush with butter and bake 10 to 20 minutes longer until chicken is brown.
