- 100 g caster sugar
- 1 tsp vanilla essence
- 100 g butter, softened
- 1 None lemon, zested and juiced
- 125 g plain flour
- 50 g chopped pistachio nuts
- 500 g raspberries
- 1 large can peaches, drained
- 3 tbsp brown sugar
Directions

1Preheat the oven to 400°F. Mix the granulated sugar, butter, flour, pistachios, vanilla and lemon peel in a bowl until crumbly. Refrigerate.

2Place the raspberries and drained peaches into an 8-cup baking dish. Sprinkle with brown sugar and drizzle with 3 tbsp lemon juice. Sprinkle with the crumble mixture.

3Bake for about 25 mins until golden brown.
