Peach And Raspberry Crumble

  • 100 g caster sugar
  • 1 tsp vanilla essence
  • 100 g butter, softened
  • 1 None lemon, zested and juiced
  • 125 g plain flour
  • 50 g chopped pistachio nuts
  • 500 g raspberries
  • 1 large can peaches, drained
  • 3 tbsp brown sugar

Directions

    Preheat the oven to 400°F. Mix the granulated sugar, butter, flour, pistachios, vanilla and lemon peel in a bowl until crumbly. Refrigerate.

    Place the raspberries and drained peaches into an 8-cup baking dish. Sprinkle with brown sugar and drizzle with 3 tbsp lemon juice. Sprinkle with the crumble mixture.

    Bake for about 25 mins until golden brown.
