  • 2 White peaches
  • 300 ml Water
  • 5 tbsp Granulated sugar
  • 3 tbsp White wine
  • 1 tbsp Lemon juice

    Cut the peaches in half, peel, and remove the pits.

    Put the ingredients into a pot and dissolve the sugar.

    Add the peaches and cook over medium heat.

    When it comes to a boil, turn the heat to low and simmer for 5-10 minutes (turn the peaches halfway through cooking).

    Let the peaches from Step 2 sit in the pot until they cool off.

    Then put them in a container and refrigerate.

    If you are making compote with just 1 peach, add 200 ml of water, 2 tablespoons of white wine, 3 - 4 tablespoons of sugar, and 2 teaspoons of lemon juice and simmer.

    There won't be enough of the simmering liquid, so tip the pot while it's simmering to keep the peach steeped in flavor.

    If you want to give it a deep pink color, add the peach peels to the pot of simmering liquid (buy the reddest peaches you can find for this).

    Strain the simmering liquid with a tea strainer before refrigerating.
