Peach Cream Pie

  • 1 c. flour
  • 1/4 tsp. salt
  • 3 medium size peaches
  • 3 Tbsp. flour
  • 1/2 tsp. cinnamon
  • 1/3 c. shortening
  • 2/3 Tbsp. ice water
  • 3/4 c. sugar
  • 3/4 c. coffee cream

    Peel peaches; cut in halves.

    Remove stones (you may use more than the 3 peaches if you desire to make larger).

    Arrange in pie shell with round sides up.

    Mix sugar and flour together; pour over peaches.

    Pour on cream; sprinkle cinnamon on top.

    Bake for 10 minutes in a 450° oven; reduce to 350° and bake 30 minutes longer.

    Canned peaches may be used.
