Peach Crumble Pie

  • 1 (8-inch) unbaked pie shell
  • 1/3 c. flour
  • 1/2 tsp. cinnamon
  • 2 1/2 c. sliced juicy peaches (about 1 1/2 lb.)
  • 3/4 c. sugar
  • 1/16 tsp. salt
  • 1/4 c. butter

Directions

    Line pie shell with plain pastry.

    Trim; let rest 10 minutes, then flute edge.

    Do not prick.

    Combine sugar, flour, salt and cinnamon.

    Add butter and work with fingertips until crumbly.

    Add 1/2 of this mixture to the peaches.

    Mix lightly and turn into pie shell.

    Sprinkle the rest of the crumbly mixture over top of peaches.

    Bake at 425° for 30 to 35 minutes or until peaches are cooked.

    Cool 2 or 3 hours on rack before cutting.
