- 2 quarts peaches, peeled,pitted and crushed
- 12 cup water
- 6 cups sugar
Directions

1Combine peaches and water in a large saucepot.

2Cook gently 10 minutes.

3Add sugar, stirring until dissolved.

4Bring slowly to a boil.

5Cook rapidly to gelling point, about 15 minutes.

6As mixture thickens, stir to prevent sticking.

7Remove from heat.

8Skim foam if necessary.

9Ladle hot jam into hot sterilized jars, leaving 1/4-inch headspace.

10Adjust two-piece caps.

11Process 15 minutes in a boiling-water canner.

12Remove from hot water bath.

13Cover with dry towel.

14Allow to set until caps seal and jars are cool.
