- 1 egg white
- 1 unbaked 9-inch pie shell
- 3/4 c. all-purpose flour
- 1/2 c. packed brown sugar
- 1/3 c. sugar
- 1/4 c. chilled margarine, cut into 6 pieces
- 6 c. sliced, fresh peaches
Directions

1Beat egg white until foamy; brush over the bottom and sides of pastry.

2In a small bowl, combine flour and sugars; cut in margarine until mixture resembles fine crumbs.

3Sprinkle two-thirds into the bottom of the pastry; top with peaches. Sprinkle with remaining crumbs.

4Bake at 375° for 40 to 45 minutes.

5Makes 6 to 8 servings.
