Peach Pie

  • 1 pie crust (9-inch preferred; not top crust)
  • 1 c. sugar
  • 1/8 tsp. salt
  • 1 Tbsp. oleo or butter
  • 3 eggs (2 if really big, but use more flour
  • 1 rounded Tbsp. flour
  • 1/4 tsp. almond extract (no substitute)

Directions

    With mixer or blender, beat eggs.

    Mix flour, sugar and butter. Beat into eggs.

    Add almond extract.

    Peel peaches and slice into pie crust until level with top of crust.

    Pour mixture over peaches and bake in middle of oven 10 minutes at 400°, then 50 minutes at 350° or until firmly set and lightly brown on top.
