Peach Rum Jam

Ingredients

  • 3 lb. fully ripe peaches, scalded, peeled and finely chopped (4 c. chopped)
  • 1 (1 3/4 oz.) pkg. powdered fruit pectin
  • 5 c. sugar
  • 1/4 c. light rum

Directions

    Combine peaches and pectin in a very large saucepan or Dutch oven.

    Place over high heat and bring to a full rolling boil, stirring constantly.
  3. 3
    Immediately add all the sugar and stir. Again bring to a full rolling boil and boil hard for 1 minute, stirring constantly.
