Peach Yogurt Cake

  • 2/3 cup margarine, 1 tbsp melted
  • 1 (13.5 oz) can peach slices in juice, drained, juice reserved
  • 1 cup granulated sugar
  • 1 tsp orange zest
  • 2 None eggs
  • 1/2 cup vanilla soy yogurt
  • 1/4 cup semolina
  • 1/4 cup ground almonds
  • 1/2 tsp baking powder

Directions

    Preheat oven to 350°F. Grease and line an 8x4 inch loaf pan with parchment paper. Pour melted margarine into pan. Arrange peaches over top.

    Cream remaining spread, sugar and orange zest until light and fluffy. Add eggs, 1 at a time, beating well between additions. Add yogurt. Fold in semolina, ground almonds and baking powder. Transfer to prepared pan, smooth surface and bake for 50-55 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool.
