- 1 (16 oz.) can sliced peaches, drained
- 1 1/2 c. flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 2/3 c. sugar
- 2 eggs, beaten
- 1/2 c. oil
- 1/2 tsp. vanilla extract
- 1/4 tsp. almond extract
- 1/2 c. sliced almonds, toasted
Directions

1Chop peaches; drain and set aside.

2Combine flour and next 3 ingredients in a mixing bowl; make a well in the center of dry ingredients.

3Add eggs and oil; stir until moistened.

4Add peaches and remaining ingredients; stir until blended.

5Spoon batter into greased or paper-lined muffin cups, filling about 2/3 full.

6Bake at 350° for 20 to 25 minutes for 12 regular size muffins.
