  • 1 package (4-serving size) sugar-free peach gelatin
  • 1/4 cup boiling water
  • 12 ounces lowfat peach yogurt
  • 2 ripe peaches, peeled, pitted and chopped
  • one 8-ounce tub fat-free frozen whipped topping, thawed
  • 4 sugar-free vanilla wafers, crumbled.
  • (Additional peaches, sliced, for topping, if desired.)

    In a medium bowl, dissolve gelatin in 1/4 cup boiling water. Stir in yogurt and mix well. Stir in sliced peaches. Add whipped topping and fold until incorporated. Spoon into eight 4-ounce ramekins. Top with wafer crumbs; add 2-3 peach slices, if desired. Chill for 2 hours before serving.
