- 2 c. sugar
- 1 c. light corn syrup
- 1 c. water
- 1/4 tsp. salt
- 2 c. raw Spanish peanuts
- 1 tsp. butter
- 1/4 tsp. soda
Directions

1Cook first 4 ingredients slowly; stir until sugar dissolves. Cook to soft ball stage (238°).

2Remove candy from heat while testing.

3Blanch 2 cups unroasted Virginia peanuts (raw Spanish do not need blanching).

4To blanch, cover with boiling water for 3 minutes; run under cold water.

5Remove coating.

6Add nuts and 1/4 teaspoon salt to mixture.

7Cook to hard crack stage (290°), stirring constantly.

8Remove from heat.
