Peanut Brittle

  • 3 c. sugar
  • 1 1/3 c. water
  • 2 Tbsp. butter
  • 1 1/2 c. white Karo
  • 1 lb. raw Spanish peanuts
  • 2 tsp. soda

Directions

    Stir sugar, Karo and water together and boil slowly until it forms a soft ball (235°) on candy thermometer.

    Add salt and peanuts; stir mixture until it becomes a light yellow (290°) on thermometer.

    Remove from heat.

    Stir in butter and soda.

    Mixture will bubble.

    Beat until butter is melted and mixture begins to thicken.

    Pour on greased platters and cool partially by lifting around edges with spatula.

    When firm, but still warm, turn over. Break in pieces when cold.
