- 3 cups sugar
- 1 cup light corn syrup
- 12 cup water
- 1 teaspoon water
- 4 12 cups dry roasted salted peanuts
- 4 tablespoons unsalted butter
- 2 teaspoons pure vanilla extract
- 1 teaspoon baking soda
Directions

1Mix baking soda, teaspoon water and vanilla.

2Set a side.

3Mix sugar, 1/2 cup water and corn syrup in a heavy pot.

4Stirring constantly.

5Cook over medium heat unitl it reaches 240* on candy thermometer.

6Add butter and nuts.

7Cook until mixture reaches 290* on candy thermometer.

8Immediatly turn off heat.

9Quickly stir in baking soda mixture until light and fluffy.

10Pour onto greased half sheet pan, spray with cooking spray.

11Roll with a marble rolling pin until about 1/4 inch thick.

12Cool completely: at least 1 hour.

13Break into small pieces and store in an air tight container.

14Makes about 3 lbs.
