  • 3 c. sifted flour
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 3/4 tsp. ground cinnamon
  • 2/3 c. packed brown sugar
  • 3/4 c. peanut butter
  • 1/2 c. butter or margarine
  • 1 2/3 c. milk
  • 1 tsp. vanilla
  • 1 egg

Directions

    Into large bowl, sift together flour, baking powder, salt and cinnamon.

    Stir in brown sugar until well blended.

    With pastry blender, cut in peanut butter and butter until coarse crumbs form. In small bowl, mix milk, vanilla and egg until well blended.

    Add milk mixture to flour/peanut butter mixture; stir just until moistened.

    Pour batter into greased 9 x 5 x 3-inch loaf pan. Bake in 375° oven for 1 hour.

    Cover loosely with sheet of foil. Bake 15 minutes more or until loaf is golden brown and toothpick inserted in center comes out clean.

    Cool in pan 10 minutes. Remove and cool on rack.

    Makes 1 loaf.
