Peanut Butter Candy Roll

Ingredients

  • 1 tsp. vanilla
  • 3 1/2 c. white sugar
  • 1 c. water
  • 1 c. white Karo syrup
  • 3 egg whites
  • 1 box confectioners sugar

Directions

    Cook water, sugar and syrup until very hard ball.

    (Use candy thermometer.)

    Beat egg whites and pour into syrup.

    Beat rapidly while adding.

    Add vanilla, then beat, adding confectioners sugar a little at a time until 3/4 of box is used.

    Warm peanut butter for spreading; sprinkle confectioners sugar on wax paper and put about 1/3 of the dough on it.

    Roll thin and then spread with peanut butter.

    Roll up like a jelly roll and wrap in wax paper. Chill about 20 minutes, then do the other dough in 2 parts the same.

    Slice in small pieces.
