Peanut Butter Candy Roll

- 1 tsp. vanilla
- 3 1/2 c. white sugar
- 1 c. water
- 1 c. white Karo syrup
- 3 egg whites
- 1 box confectioners sugar
Directions

1Cook water, sugar and syrup until very hard ball.

2(Use candy thermometer.)

3Beat egg whites and pour into syrup.

4Beat rapidly while adding.

5Add vanilla, then beat, adding confectioners sugar a little at a time until 3/4 of box is used.

6Warm peanut butter for spreading; sprinkle confectioners sugar on wax paper and put about 1/3 of the dough on it.

7Roll thin and then spread with peanut butter.

8Roll up like a jelly roll and wrap in wax paper. Chill about 20 minutes, then do the other dough in 2 parts the same.

9Slice in small pieces.
