- 3 large eggs
- 1 cup corn syrup, dark
- 1/2 cup sugar
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
- 1 cup peanuts, salted
- 1 x pie shell (9 inch) chilled
- 1 x whipped cream
Directions

1Beat eggs, corn syrup, sugar, peanut butter and vanilla until smooth and thickened, about 4 minutes.

2Stir in peanuts and blend.

3Roll out pastry to fit 9 inch pie pan.

4Pour in filling.

5Bake at 400F (200C).

615 minutes, then reduce heat to 350F (180C).

7and bake until knife inserted in center comes out clean, 30 to 35 minutes.

8Cool completely before serving.

9Top each slice with whipped cream.
