  • 1 medium sweet onion, chopped
  • 1 stalk celery, chopped
  • 1/4 c. butter
  • 3 Tbsp. flour
  • 28 oz. to 2 qt. good chicken stock
  • 1/2 to 3/4 c. peanut butter
  • 1 3/4 c. half and half

Directions

    Saute onion and celery in butter until soft, but not brown. Stir in flour and blend.

    Add chicken stock, stirring constantly, and bring to a boil.

    Remove from heat and puree in food blender or processor.

    Add peanut butter and half and half.

    Return to low heat and heat thoroughly, stirring so it does not burn, but do not boil.
