Peanut Soup

Ingredients
- 1 Tbsp. butter
- 1 c. chopped onion
- 2 Tbsp. fresh ginger root
- salt and pepper to taste
- dash of cinnamon
- dash of cloves
- 1 c. chopped raw peanuts
- 2 c. chicken stock
- 1/2 c. raisins
- 1 Tbsp. honey
- 1/2 c. peanut butter
- 1 1/2 c. milk or buttermilk
Directions

1Saute onion, ginger, salt and pepper in butter until onion becomes clear.

2Add cinnamon, cloves and peanuts and saute 5 to 10 minutes.

3Stir in chicken stock, raisins, honey and peanut butter. Mix thoroughly.

4Cover and simmer over low heat for one hour. Add milk and serve when soup is hot.

5Makes 10 small servings.
