Pear And Raspberry Crumbles

  • 1 cup all-purpose flour, plus 2 tbsp
  • 1/2 cup butter, chopped
  • 1 1/4 cups rolled oats
  • 1/3 cup shredded coconut
  • 1 tsp ground cinnamon
  • 1/3 cup granulated sugar
  • 3 cups thick vanilla yogurt
  • 1 (28 oz) can pear halves in syrup, drained, thinly sliced lengthwise
  • 3 oz frozen raspberries, thawed

Directions

    Preheat oven to 400°F. Grease and line a baking tray with parchment paper. Place flour in a bowl. Cut in butter until mixture resembles coarse breadcrumbs. Stir in oats, coconut, cinnamon and sugar. Spread mixture over prepared tray and bake, stirring occasionally, for 4-5 mins, or until golden. Let cool on tray.

    Spoon 1/2 the yogurt into 4 (14 oz) serving glasses. Top with 1/2 the pears, 1/2 the raspberries and 1/2 the oat mixture. Repeat layers, finishing with oat mixture. Serve topped with extra raspberries.
