Ingredients
- 2 c. sugar
- 1 1/2 c. vegetable oil
- 3 eggs
- 3 c. flour
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- 2 tsp. vanilla
- 2 c. coconut
- 1 c. chopped dates
- 3 c. raw or canned pears, drained and chopped
- 1 c. pecans, chopped
Directions

1Cream together sugar and oil.

2Add eggs one at a time, mixing well after each addition; set aside.

3Sift flour with cinnamon, salt and soda, then add to creamed mixture.

4Add vanilla and nuts, coconut, dates and pears.

5Stir by hand.

6Batter will be thick. Pour into greased and floured Bundt pan.

7Bake at 325° for 1 1/2 to 2 hours or until done.

8Cool on rack until cake shrinks from sides of pan.

9Remove from pan to complete cooling.
