  • 6 small pears, peeled, cored and chopped
  • 2 cups sugar
  • 1 cup pecans, chopped
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 eggs, well-beaten
  • confectioners' sugar, for dusting

    Grease and flour a 12 cup Bundt cake pan.

    Place the pears, granulated sugar and pecans in a large bowl; stir well to coat.

    Set aside for 1 hour, stirring occasionally.

    Preheat the oven to 325°F

    Sift the flour, baking soda and salt over the pear mixture.

    Stir in the oil, vanilla, and eggs.
