  • 6 c. ripe pears, pared, quartered and sliced
  • 9-inch unbaked pie shell
  • 2 Tbsp. lemon juice
  • 1/2 tsp. grated rind
  • 3/4 c. sugar
  • 3 Tbsp. flour
  • 1/2 tsp. coriander
  • 1/2 tsp. nutmeg
  • 1/8 tsp. salt
  • 2 Tbsp. butter

Directions

    Place pears in pie shell.

    Sprinkle with lemon juice and rind. Sift together sugar, flour, coriander, nutmeg and salt.

    Sift over pears.

    Dot with 2 tablespoons butter.

    Cover with vented crust. Bake at 4525° until center is lightly browned and pears soft (about 35 to 45 minutes).

    Serve with heavy cream while hot.
