- 6 c. ripe pears, pared, quartered and sliced
- 9-inch unbaked pie shell
- 2 Tbsp. lemon juice
- 1/2 tsp. grated rind
- 3/4 c. sugar
- 3 Tbsp. flour
- 1/2 tsp. coriander
- 1/2 tsp. nutmeg
- 1/8 tsp. salt
- 2 Tbsp. butter
Directions

1Place pears in pie shell.

2Sprinkle with lemon juice and rind. Sift together sugar, flour, coriander, nutmeg and salt.

3Sift over pears.

4Dot with 2 tablespoons butter.

5Cover with vented crust. Bake at 4525° until center is lightly browned and pears soft (about 35 to 45 minutes).

6Serve with heavy cream while hot.
