  • 3 qt. pears, sliced
  • 2 c. water or juice
  • 4 1/2 c. sugar
  • 6 slices lemon (if desired)

Directions

    Boil juice and sugar 5 minutes.

    Add fruit to partly cooled syrup.

    Bring gently to boil.

    Add lemon.

    Boil rapidly until clear and tender.

    Let cool rapidly.

    Let stand in syrup to plump.
