- 2 medium pears, peeled, cored, and sliced
- 1 teaspoon grated fresh lemon rind
- 2 1/2 tablespoons lemon juice
- 1/3 cup sugar
- 1 tablespoon cornstarch
- 1/2 - 1 cup water
Directions

1Combine first 3 ingredients in a container of an electric blender; process until smooth.

2Combine pear mixture, sugar, cornstarch, and water in a medium saucepan.

3Bring to a boil; reduce heat, and cook, stirring constantly, 1 minute.

4Remove from heat; cool.

5Yield: 2 2/3 cups.
