- 1 c. sliced mushrooms (Morel, Italian, any variety)
- 2 Tbsp. minced garlic
- 5 Tbsp. butter, melted, or olive oil
- 1/4 c. Madeira wine or other cooking wine or sherry
- 2 Tbsp. chives
- 1/2 c. cooked wild rice
- 4 sheets phyllo pastry, thawed
- 1/2 lb. leeks (save green tops, cut into ribbons and blanched)
Directions

1In medium skillet, saute (with 1 tablespoon butter) mushrooms, leeks (cut into pieces) and garlic.

2Add wine.

3Boil gently until wine evaporates.

4Stir in chives and rice.

5Set aside.
