Ingredients

  • 1 c. sliced mushrooms (Morel, Italian, any variety)
  • 2 Tbsp. minced garlic
  • 5 Tbsp. butter, melted, or olive oil
  • 1/4 c. Madeira wine or other cooking wine or sherry
  • 2 Tbsp. chives
  • 1/2 c. cooked wild rice
  • 4 sheets phyllo pastry, thawed
  • 1/2 lb. leeks (save green tops, cut into ribbons and blanched)

Directions

    In medium skillet, saute (with 1 tablespoon butter) mushrooms, leeks (cut into pieces) and garlic.

    Add wine.

    Boil gently until wine evaporates.

    Stir in chives and rice.

    Set aside.
