  • 1/4 cup butter
  • 1 cup firmly packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup sifted cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans

Directions

    Cream butter; gradually add sugar, beating well. Add egg and vanilla; beat well.

    Combine flour, baking powder, and salt; gradually add to creamed mixture, mixing well. Stir in pecans.

    Spread batter in a greased and waxed paper-lined 8-inch square baking pan. Bake at 350° for 25 minutes. Cool and cut into 2 1/2- x 1-inch bars.

    Note: Recipe may easily be doubled and baked in two 8- inch pans.
