  • 2 c. unsifted coarse whole-wheat flour
  • 1 c. pastry or cake flour
  • 3/4 c. brown sugar
  • 1 tsp. salt
  • 3 tsp. baking powder
  • 1 tsp. baking soda
  • 2 c. buttermilk
  • 1 c. pecan meats, cut fine

Directions

    Mix in a bowl the whole-wheat flour, pastry or cake flour, brown sugar, salt, baking powder and baking soda. Add buttermilk and pecan meats. Stir well. Spoon into a buttered loaf pan, 9 x 5-inches. Bake about 1 hour at 325°.
