  • 1 lb. butter (1/2 margarine, 1/2 butter)
  • 1 lb. brown sugar
  • 1/2 lb. cherries
  • 1 lb. shelled pecans
  • 1/2 lb. pineapple
  • 4 c. plain flour, sifted
  • 6 eggs, separated
  • 1 tsp. baking powder
  • 1 1/4 oz. or 2 1/2 Tbsp. pure lemon extract

    Cream butter and sugar.

    Add egg yolks, one at a time.

    Beat well after each.

    Add 2 cups of flour with baking powder.

    Add all extract.

    Use 2 cups of flour to dredge fruit and nuts.

    Fold into creamed mixture.

    Beat egg whites stiff and fold into batter.

    Let stand overnight.
