Ingredients

  • 3/4 c. unsalted butter, softened (I use diet oleo)
  • 1/2 c. confectioners sugar
  • 1 tsp. vanilla
  • 2 c. flour
  • 1 c. coarsely chopped pecans

Directions

    Combine first 2 ingredients in bowl and beat until smooth. Add vanilla.

    Stir in flour and mix until dough begins to form. Add pecans and continue working the mixture until all is incorporated.

    Shape dough into a log, about 1 1/2-inches thick. Roll up in waxed paper or foil.

    Chill for 30 minutes.

    Unwrap dough and slice into 1/4-inch thick rounds.

    Bake 10 minutes; cool slightly.

    Remove from tin.

    Sprinkle with confectioners sugar.
