- 2 c. flour
- 4 tsp. baking powder
- 1/2 tsp. salt
- 1 egg, beaten
- 1 c. milk
- 2 Tbsp. butter, melted and cooled
- 1/2 c. sugar
- 1 c. pecans, chopped
Directions

1Preheat oven to 350°.

2Sift together the flour, baking powder and salt.

3To the beaten egg, add milk, melted butter and sugar. Gently stir in flour mixture until the flour is moistened. Add the pecans.

4Spoon batter into greased, miniature muffin tins, filling half full. Bake at 350° for about 15 minutes or until firm to the touch.

5Makes 36 muffins.
