- 3 eggs
- 1/4 c. softened butter or margarine
- 1/4 c. sugar
- 1 c. dark corn syrup
- 1 tsp. vanilla
- 1 1/2 c. pecans
- 9-inch unbaked pastry crust
- whipped cream (optional)
Directions

1Heat oven to 350°.

2Put eggs, butter, sugar, corn syrup and vanilla into blender container.

3Cover and blend at medium speed, about 2 minutes, or until very light and fluffy.

4Add pecans. Cover and blend at medium speed just until nuts are coarsely chopped.

5Pour into pastry crust.

6Bake 40 to 50 minutes or until filling is set at edges, but is still lightly soft in center (overbaking will cause filling to curdle).

7Cool.

8Top with whipped cream, if desired.

9Makes 1 (9-inch) pie.
