- 2 1/2 c. all-purpose flour
- 4 eggs
- 1 c. whole wheat flour
- 3 c. sugar
- 16 oz. can pumpkin
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 c. chopped pecans
- 1 tsp. nutmeg
- 1 c. oil
- 2/3 c. water
Directions

1Heat oven to 350.

2Grease only the bottom of 2 9 X 5 inch loaf pans.

3Lightly spoon flour into measuring cup; level off.

4In large bowl, combine all dry ingredients, mix well.

5In medium bowl, mix oil, water, eggs, and pumpkin.

6Add flour mixture, beat for 1 minute at medium speed.

7Fold in pecans.

8Pour batter into prepared pans.

9Bake at 350 degrees for 60 to 70 minutes.

10Cool 10 minutes; remove from pans.

11Cool on wire racks.
