  • 1 1/2 c. sugar
  • 1 c. butter or margarine, softened
  • 4 eggs, at room temperature
  • 1 tsp. vanilla or almond extract
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 (21 oz.) can cherry pie filling
  • powdered sugar to dust over cake

    Cream margarine and sugar.

    Add eggs; beat until light and fluffy.

    Add vanilla.

    Stir in flour and baking powder.

    Mix until smooth.

    Butter a 13 x 9-inch pan.

    Pour mixture into pan.

    Spoon a teaspoon of pie filling onto cake in 16 spots, spacing 4 spoonfuls evenly in each direction.

    Bake at 350° for 35 to 50 minutes or until golden and cake tests done (glass pan 325°). Sprinkle with powdered sugar.

    Spoon slightly sweetened whipped cream over each piece.
