- 2 Tbsp. corn oil
- 1 lb. medium shrimp, cleaned
- 1 small tomato, cut in wedges
- 1/2 c. green pepper, sliced
- 1/3 c. dark corn syrup
- 1/4 c. soy sauce
- 2 Tbsp. dry sherry
- 2 Tbsp. cider vinegar
- 2 Tbsp. cornstarch
- 1 clove garlic, minced
- 1 tsp. ground ginger
Directions

1In large skillet, heat corn oil over medium-high heat.

2Add shrimp.

3Cook, stirring occasionally, about 3 minutes.

4Stir in tomatoes and green peppers.

5Stir together remaining ingredients. Add to skillet.

6Stirring constantly, bring to boil over medium heat and boil 1 minute.

7Serve over cooked rice.
