  • 1 pound penne
  • pinch crushed red pepper
  • 3 large cloves garlic chopped
  • 10 sun dried plum tomatoes chopped
  • 1/4 cup italian parsley finely chopped
  • 1/3 cup olive oil
  • 8 ounces imported tomatoes, skinned diced and seeded

Directions

    Heat the oil add the crushed red pepper and garlic and cook stirring until garlic is golden.

    Add the sun dried tomatoes and stir well. Saute over medium high heat, stirring frequently for 2 minutes. Add diced tomatoes and stir gently. Reduce heat to low and allow to simmer for about 10 minutes stirring frequently.

    Add to drained penne and toss well. Sprinkle on parsley and toss.
