  • 2 T Olive oil
  • 1 medium onion, chopped
  • 2 shallots, chopped
  • 1/2 green pepper, seeded and chopped
  • 1 small zucchini, diced with skin
  • 1 lb lean ground beef
  • 28 oz can tomatoes, drained and chopped
  • 1 T chopped fresh parsley
  • 1-1/2 C canned red kidney beans, drained
  • 1 t basil
  • 1/2 t chili powder
  • 5 C cooked penne pasta
  • 1 C grated mozzarella cheese
  • Salt and pepper
