- 8 oz. penne
- 1/2 lb. fresh mushrooms, sliced
- 1 Tbsp. olive or canola oil
- 1 14 1/2 oz. diced tomatoes, undrained
- 1 Tbsp. minced fresh basil or 1 tsp. dried basil
- 1/4 tsp. salt
- 1/3 c. crumbled feta cheese or blue cheese
Directions

1Cook pasta according to directions.

2Meanwhile, in a large skillet saute mushrooms in oil for 5 minutes.

3Add the tomatoes, basil and salt.

4Cook and stir for 5 minutes, drain pasta and add to the skillet.

5Stir in cheese heat thru.
