- 1/2 lb. penne
- 2 Tbsp. olive oil
- 3 c. frozen pearl onions
- 1 garlic clove, crushed
- 1 (16 oz.) can tomatoes
- 1 (6 oz.) can tomato paste
- 2 tsp. sugar
- salt to taste
- 2 eggs
- 16 oz. cottage cheese
- 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 3 c. grated Cheddar cheese
- 1 tsp. sage
Directions

1Cook penne in boiling, salted water, following package directions and drain.

2Heat oil in a large saucepot.

3Add onions and garlic and saute

4at low heat.

5Stir in tomatoes plus 1 can liquid.

6Break up tomatoes.

7Stir in paste, sugar and salt.
