Ingredients

  • 1/2 lb. penne
  • 2 Tbsp. olive oil
  • 3 c. frozen pearl onions
  • 1 garlic clove, crushed
  • 1 (16 oz.) can tomatoes
  • 1 (6 oz.) can tomato paste
  • 2 tsp. sugar
  • salt to taste
  • 2 eggs
  • 16 oz. cottage cheese
  • 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 3 c. grated Cheddar cheese
  • 1 tsp. sage

Directions

    Cook penne in boiling, salted water, following package directions and drain.

    Heat oil in a large saucepot.

    Add onions and garlic and saute

    at low heat.

    Stir in tomatoes plus 1 can liquid.

    Break up tomatoes.

    Stir in paste, sugar and salt.
