  • 6 c. sugar, divided
  • 2 c. evaporated milk
  • 2 Tbsp. corn syrup
  • 1/4 tsp. soda
  • 1/2 c. butter
  • 1 tsp. vanilla extract
  • 2 c. chopped pecans

Directions

    Place 2 cups sugar in a heavy skillet; cook over low heat until melted and golden brown, stirring constantly.

    Combine remaining 4 cups sugar, evaporated milk and corn syrup in a large saucepan; bring mixture to a boil while sugar is caramelizing. Slowly pour caramelized sugar into boiling sugar mixture, stirring constantly.

    Cook, stirring occasionally, to soft ball stage (236°).

    Remove from heat and immediately add soda; stir vigorously as it foams.

    Add butter, stirring only until melted. Cool mixture about 20 minutes or until lukewarm.

    Add vanilla and beat until thick and creamy.

    Stir in pecans.

    Pour candy into a buttered 13 x 9 x 2-inch pan.

    Cool and cut into 1-inch squares. Yield:
