- 6 c. sugar, divided
- 2 c. evaporated milk
- 2 Tbsp. corn syrup
- 1/4 tsp. soda
- 1/2 c. butter
- 1 tsp. vanilla extract
- 2 c. chopped pecans
Directions

1Place 2 cups sugar in a heavy skillet; cook over low heat until melted and golden brown, stirring constantly.

2Combine remaining 4 cups sugar, evaporated milk and corn syrup in a large saucepan; bring mixture to a boil while sugar is caramelizing. Slowly pour caramelized sugar into boiling sugar mixture, stirring constantly.

3Cook, stirring occasionally, to soft ball stage (236°).

4Remove from heat and immediately add soda; stir vigorously as it foams.

5Add butter, stirring only until melted. Cool mixture about 20 minutes or until lukewarm.

6Add vanilla and beat until thick and creamy.

7Stir in pecans.

8Pour candy into a buttered 13 x 9 x 2-inch pan.

9Cool and cut into 1-inch squares. Yield:
