Pepper Jelly

Ingredients

  • 2 c. bell pepper juice (put in blender and strain, takes about 12 to 14 bell peppers)
  • 7 c. sugar
  • 1 1/2 c. cider vinegar
  • 1 1/2 tsp. Tabasco
  • 1 (6 oz.) bottle Certo
  • few drops green coloring

Directions

    Mix first 3 ingredients.

    Place over high heat and add Tabasco. While mix is coming to a high boil, add coloring.

    Stir in Certo.

    Bring to a rolling boil and boil hard for one minute, stirring constantly.

    Remove from heat and with metal spoon skim off foam.

    Pour quickly into sterile jars.

    Cover.

    Makes 10 medium size glasses.

    Great served with cream cheese on crackers.
