Pepper Jelly

Ingredients

  • 3 large bell peppers (green or red)
  • 5 or 6 hot peppers, chopped
  • 1 1/2 c. white vinegar (5% acidity)
  • 6 c. sugar
  • 1 1/2 bottles Certo or 3 pkg. food coloring (green or red, depending on color of peppers)

Directions

    Combine peppers and vinegar and puree in blender of food processor in 2 or 3 batches.

    Combine puree with sugar and bring to a rolling boil.

    Boil for 5 minutes.

    Add food coloring and remove from heat.

    Add Certo and stir well.

    Return to heat and boil for 1 minute.

    Strain through sieve and skim off any foam. Pour in sterilized jars and seal.
