- 1/2 c. butter
- 1/3 c. green onion, chopped
- 1/3 c. red bell pepper, finely chopped
- 1/2 c. green bell pepper, finely chopped
- 2/3 c. sour cream
- 2 eggs, room temperature
- 1 1/2 c. flour
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 3/4 tsp. salt
Directions

1Preheat oven to 400°.

2Grease muffin cups.

3Melt butter in skillet with onion and peppers; cook until tender about 7 minutes, stirring often.

4Cool to lukewarm.

5Whisk sour cream and eggs in medium bowl.

6Stir in cooled onion mixture.

7Combine flour, sugar, baking powder, salt, soda in large bowl.

8Make well in center.

9Add sour cream mixture, stirring just until blended.

10Fill muffin cups 3/4 full.

11Bake at 400° for 20 to 25 minutes.

12Makes 10 muffins. This is a great smelling complement to hearty soups.
