- 4 c. cooked rice
- 1 small carton sour cream
- 1 can sliced water chestnuts
- 1 jalapeno pepper, diced
- 1/2 c. or more grated Monterey Jack cheese
- chicken broth
- 2/3 c. creamy Italian dressing
- 1 Tbsp. jalapeno pepper juice
Directions

1Cook rice according to package instructions, however, substitute chicken broth for the water.

2Stir in sour cream, creamy Italian dressing, water chestnuts, jalapeno pepper and pepper juice.

3Place in a greased 9 x 13-inch casserole dish. Cover with Monterey Jack cheese.

4Bake in a 350° oven for 20 minutes.
