- 2 lb. London broil or tri-tip, all fat removed
- 1/4 c. oil
- 1 c. water
- 1 onion, sliced
- 1 tsp. garlic salt
- 2 bell peppers, sliced
- 1 Tbsp. cornstarch
- 2 tsp. sugar
- 2 Tbsp. soy sauce
- 2 large tomatoes
- 2 c. cooked rice
Directions

1Slice meat very thin across grain.

2Cook in oil until loses pink.

3Add water, onion and garlic.

4Simmer 40 minutes.

5Add bell peppers; cook 5 minutes.

6Blanch tomatoes in boiling water.

7Remove skin; quarter.

8Mix starch, sugar, soy and add to meat.

9Simmer 1 minute.

10Add tomatoes.

11Simmer 5 minutes.

12Serve over rice.
